Injera is Ethiopian staple pancake shaped bread made from Teff (gluten free nutritionally loaded grain grown in Ethiopia, high in calcium, copper, zinc and twice as much iron as wheat or barley. It also contains phosphorous, magnesium, boron and some B Vitamins ). Injera, is eaten with all dishes and is used to scoop up the food. Cutlery is unnecessary.
